Crammed full of chunks of chicken breast in a creamy curry flavoured mayonnaise, juicy sultanas, apricots and our signature three cheese, this toastie is inspired by the original dish created for Queen Elizabeth II’s coronation banquet in 1953.

You’ll find this twist on a British classic at your local TOAST, so don your crown and enjoy the taste of royal cuisine that’s fit for a King.

 

Want to make your own Coronation Chicken Toastie?

To start, you'll need some cooked chicken breast, either grilled or roasted, shredded into small pieces. In a bowl, mix together mayonnaise, curry powder, apricot jam, and a squeeze of lemon juice. Add the shredded chicken to the mixture and stir until it's well coated. This creates the coronation chicken filling that will go inside your toastie.

Next, assemble your sandwich. Butter two slices of bread and lay one slice, butter-side down, on a hot griddle or in a frying pan. Add a generous scoop of the coronation chicken mixture onto the bread, spreading it evenly over the slice. Top with a handful of grated cheddar cheese, then add the second slice of bread, butter-side up.

Grill the sandwich on both sides until the bread is golden brown and the cheese is melted and gooey. Cut the toastie in half and serve it hot, garnished with some fresh herbs or a sprinkling of toasted almonds. Delicious.
